Keto Western Omelette

Keto Western Omelette (Recipe Credit: https://www.dietdoctor.com/recipes/keto-western-omelet ) Ingredients 6   eggs 2 tbsp  heavy whipping cream or sour cream salt and pepper 3 oz.  shredded cheese 2 oz.  butter ½   yellow onion, finely chopped ½   green bell pepper, finely chopped 5 oz.  smoked deli ham, diced Instructions In a mixing bowl, whisk eggs and cream/sour cream until fluffy. Add salt and pepper. Add half of the shredded cheese and mix well. Melt the butter in a frying pan on medium heat; sauté the diced ham, onion and peppers for a few minutes. Add the egg mixture and fry until the omelet is almost firm. Be extra mindful not to burn the edges. Reduce the heat after a little while. Sprinkle the rest of the cheese on top and fold the omelet. Serve immediately... and enjoy! Tip! Pair with a fresh, green salad. If you like to keep it spicy, serve with Tabasco or Sriracha sauce, or jalepenos on the side. Yes! ...

SHREDDED MEXICAN CHICKEN

SHREDDED MEXICAN CHICKEN (Recipe Credit:  https://www.brit.co/keto-shredded-chicken/ ) (Makes 6 servings) Ingredients: 2 pounds boneless, skinless chicken thighs 2 tablespoons taco seasoning 1 (8-ounce) can tomato sauce ½ cup (1 stick) salted butter sliced jalapeño peppers sliced red onions chopped tomatoes diced avocado shredded cheese sour cream Directions: Place the chicken thighs in a 4-quart or larger slow cooker and sprinkle each thigh with the taco seasoning. Pour the tomato sauce over the seasoned chicken and top with the butter. Cook on low for 8 to 10 hours, until the chicken is tender. Shred the chicken with a fork and mix it with the liquid in the slow cooker. If desired, serve the shredded chicken with sliced jalapeños, sliced onions, chopped tomatoes, diced avocado, shredded cheese, and/or sour cream. (Try serving over riced cauliflower cooked in taco seasoning!)

It adds a nice subtle flavor to the sauce and gives it that signature consistency that we all love. I don’t like Tofu, can I use something else?  If you’re not vegan, you are in no shortage of choices when it comes to protein (chicken breast, steak, whatever you like). If you’re vegan, tempeh would be my suggestion for you.
